Digitally controlling the levels prior to the last Digital to Analog conversion reduces the resolution of the conversion, which then degrades the final signal quality. Level Pilot design avoids this by allowing you to control the volume levels after the conversion, so you can have maximum resolution without ever sacrificing audio quality.
